Pizza is my Ride or Die..at least this week
Mmmmm tulips!
Another banner week in the books. Outdoors for hours on end. My vitamin D is off the chain, just saying. There was massive amounts of tulip pulling, seed planting, and general spring sprucing up. Don't believe me?
It still amazes me who and where I am at 30. 20 year old me would be appalled, to say the least. A married vegan flower farmer cancer survivor was not my dream in the least bit. Clint and I like to play a game to display certain amounts of incredulity at where we ended up. It starts with 'If I would've told you 10 years ago that you would be…' and continues from there into real life awesomeness. For example… if I would've told you 10 years ago you'd have a cat named Seeley Booth who likes to drink only from the bathroom faucet, would you've believed me? Nope, sure wouldn't have.
Life has a funny way of putting you exactly where you're meant to be. 10 years ago, I wanted nothing to do with farming, rural living, veganism, marriage, the list goes on. I can tell you though, I have no desire to be anywhere else. I love flower farming (even with the amount of dirty work…ha ha bad pun), I couldn't imagine eating animal products, and I absolutely love my hubs (he feeds me anndd foot runs were part of his wedding vows..score!). This isn't a 'rub it in your face' post. I'm feeling incredibly grateful for everything I've been blessed with. God has totally had my back through thick and thin and everywhere in between. He's certainly led me down a path I couldn't have anticipated, and I'm grateful.
Now, on to the delicious recipes that you wouldn't have been able to partake in if you weren't reading my vegan blog. Fate, I tell you what.
First up: sloppy joes from Nora Cooks. This is easily one of my go to recipes for simple, quick, and alllllwwwaaaays awesome. You could use your own bbq sauce (homemade from The Vegan8) or store bought, but the recipe is on point (so feel free to keep it as is).
Tuesday was pizza for lunch… and supper. I've said it before and I'll say it again. Pizza is one of our go to's. It's pretty much the same recipe with little changes here and there. This time I tried Jamaican jerk pizza from . Local grocery stores didn't have tempeh, so I subbed chickpeas.
I simmered the jerk sauce with a corn starch slurry to thicken and used as the base. We need sauce under the toppings in our house. I made roughly 3x as much sauce so it easily made enough for 2 pizzas, as the base and drizzled on top. I added the onion and pineapple on pizza before baking because of personal preference (it's your pizza, make it how you like it). I didn't have scotch bonnets, so instead used a combo of cayenne pepper and a Buena mulata purple chili we have on one of our pepper plants.
This pizza came together quickly and tasted fantastic! My pizza was suuuper messy, as the jerk sauce was still a little too runny to use as a base. But hot darn, I think we have a repeat pizza on our hands.
Honestly, who gets tired of pizza? Well...not this house because next up are pizza burgers from Blissful Basil. I subbed regular flour. We were hungry (it's a regular occurrence) so I didn't cool the burgers as long as the recipe called for (an hour!). I highly recommend you do not skip this step or shorten; my burgers were crumbly in the skillet. I added cayenne for spice and instead of making sliders, I made normal sized patties. Overall they had good flavor: very pizza burger esque.

With all the outdoorsy things going on, it was another week of leftovers (yay leftovers!). Also…I may have attempted to start the house on fire for the second time… oops. Note to self: make sure the right burner is on and your phone isn't on top of said burner.
Sunday, the water heater and holding tank decided to go on strike. I planted some things (my window boxes..yaaay!) and Clint spent the entire day in the basement (eeks). With the goings on, supper was a 'fend for yourself' option. You know what that means- popcorn with olive oil and italian seasoning and a peanut butter mug cake from Mommy's Kitchen. Yuum. I added cocoa powder (to the mug cake, not the popcorn, don't make it weird). I may have seriously considered breaking up a caramel chocolate SO Dairy bar but decided that was too much work.

All in all, it was the perfect end to another week on the farm. The tulips are almost done, next up: allium, iris, ranunculus, and peonies. Ugghhh, I looove peonies so much.
