Spring is here, but my summer body has left

Spring is (unofficially) here.  The sun is shining, the wind is howling,  and all the little spring plants are readying themselves to burst into bloom (yay!). I love spring; I love tulips and irises and warmer weather. It means we're that much closer to summer break (even though we're in the middle of an extended spring break, eek!) and all the veggies will be ready in about 3-4 months to munch on.  

With all the spring feels, comes the inexplicable compulsion to be outdoors,  enjoying the air with others. Case in point, Hubs and I took a Sunday drive (we enjoy driving around aimlessly). Others were also taking advantage of the glorious (albeit windy) weather. 

Granted, that drive has been the first time in almost two weeks that I have been off our property (not counting walks on the surrounding gravel roads). I may or may not be going a little stir crazy… ish. Honestly, I'm a pretty hard core homebody and introvert.  This last week, I have had around zero motivation to do anything outside the realm of stuffing my face with an enormous amount of food (besides today's jaunt). My desire to cook/bake has been around that level too (the zero, not the 'let's go overboard and make and eat allll the food'). 

I had great intentions of being productive and trying awesome new recipes (well.. I kind of did that). I made a few recipes from the Thug Kitchen: Fast as F$#ck cookbook (Amazon has all three Thug Kitchen cookbooks for sale). Yes, there is a ridiculous amount of swearing but the recipes are on point. (Pinterest has recipes that are similar to the ones I tried in the Thug Kitchen cookbook, so I linked those). 

 Monday was japchae, a Korean noodle dish. The sauce was awesome,  not too heavy and not incredibly sweet. I used button/cremini mushrooms and added red cabbage because I had veggies that needed used. I also used rice noodles instead of sweet potato noodles. It still turned out yummy.

Tuesday was borracho sweet potato and lentil burritos (delicious!). Unfortunately, I didn't find a similar recipe to this one on Pinterest. 

and Wednesday was mujadarra,  a Lebanese lentil and rice dish. It was filling and the ultimate comfort food.  It has a ridiculous amount of onions and oil fyi. We had to make naan (recipe linked in my first post I believe), and I added extra garlic  powder, onion powder, and salt. It made quite the difference.

Thursday….or maybe Friday… was an 'I'm lazy so I'll thaw pizza crust and throw some toppings on. Those toppings may or may not have been the leftover sweet potato and bean burrito filling. With sriracha.

My sweet tooth has been kicking into high gear as of late,  so I pulled up my handy dandy pinterest app and found this bad boy for vegan molten chocolate mug cake from Little Sunny Kitchen.  I may have doubled the recipe and made it Friday and Saturday… oh well, it happens. When you need the sweet, you make the sweet.

This Thursday is my 9 month check up with my oncologist.  Cue anxiety-ridden, terror-filled(kind of?) music. I'm hoping for good news. I'm already freaked out by COVID-19, let's not try to win Fear Factor by scaring me to death. 'Kay, thanks.  I'll let you know how it goes.
